Meet Chef Rocio Fleckenstein, the talented chef behind Lady Pirate. With a passion for fermentation and a background in culinary arts, Rocio has created a line of products that are not only tasty but also packed with nutrients.
A Culinary Journey
Rocio’s love affair with food began at a young age. Growing up in Southern California and Spain, she was exposed to a variety of cuisines that emphasized fresh, locally-sourced ingredients. Her grandmother, who taught her how to pickle fresh anchovies in vinegar and parsley, was a significant influence on her culinary journey.
After attending the Culinary Institute of America in Hyde Park, New York, Rocio worked in several kitchens, including True Food Kitchen in Newport Beach and Brooklyn Girl in San Diego. It was during her time at The Joint in Ocean Beach that she discovered her passion for fermentation.
The Birth of Lady Pirate
Rocio’s journey as a chef took her to Ballast Point in Little Italy, where she perfected her kimchi recipe. With the encouragement of her wife, Leah, she started selling her kimchi at the North Park Farmers Market. The rest, as they say, is history.
Lady Pirate was born out of Rocio’s desire to break free from the culinary mold and chart her own course. The name “Lady Pirate” is a nod to the pirates who lived on the sea, free from societal norms. Rocio’s connection to the sea is personal, as her grandfather is related to Captain James Cook, who used sauerkraut to prevent scurvy on his voyages.

Lady Pirate offers a range of fermented products, each with its own unique flavor profile. From the spicy kick of Kimchi Rojo to the tangy crunch of Deli Dills, there’s something for every palate.
