Growing up on a farm in Southeastern North Carolina, I was surrounded by the wisdom of seasons changing and crops coming to fruition. Those long, hot days spent preserving sweet corn and shelling butter beans became a cherished part of my childhood, although I must admit, I didn’t fully appreciate the art of food preservation back then. Watching my grandmother tirelessly canning tomatoes and making luscious strawberry jam seemed to take an eternity but looking back, the rewards of her labor were a heartwarming feast throughout the year.
A Resurgence of a Timeless Tradition
Home canning was once a common household practice — a lifeline during challenging times, especially evident during World War II. However, as industrial processes and convenience foods took over, the craft seemed to fade into the background. Recently, however, I’ve noticed a delightful resurgence in home canning popularity, sparked notably by the pandemic’s unique pressures. What was once a chore has transformed into an enjoyable hobby for many, including myself.
For many of us, this revival is part nostalgia and part exploration. The satisfaction derived from growing your own produce and transforming it into jars of goodness is immensely rewarding. It’s more than just food preparation; it’s a way to connect with our roots and savor those sweet memories of loved ones.

However, with this boom in new canners comes a critical need for education. It’s all too easy to stumble upon untested recipes online that could lead to disastrous results — perhaps even foodborne illnesses like botulism. The safety of home canning hinges upon understanding proper methods and utilizing tested recipes. Simple mistakes, like altering recipes or not checking pressure canner gauges, can jeopardize our health.
